Arroz com Leche

Today I got home from work and started to think about my friend Camila from Chile...
She is an incredible cook with a lot of  amazing recipes to share with us! Here is one of her best!

Sweet Rice / Arroz com Leche by Camila Zuniga


ingredients:
1 cup of rice
1 ¾ cups of water
2 1/2 cups of milk
1/2 teaspoon of vanilla extract
1/3 cup of sugar
cinnamon


Directions


Rinse the rice in a few changes of cold water. Drain the rice well in a sieve. In a medium, heavy-bottomed pot with a tight-fitting lid, combine water and the rice.  Bring to a boil over high heat. As soon as the water is boiling, lower the heat to a simmer and cover.  Cook at a gentle simmer until the water is completely absorbed and the rice is tender, about 10 minutes.Remove the pot from the heat and let it sit for a few minutes.
Then add the milk, sugar and cinnamon.  cook over  low temperature  … Stir it from time to time so rice does not stick to bottom of pot, about 5 mins. When the milk is absorbed by rice you can remove from stove top and let cool to eating temperature.
